Ingredients:
- 200g caster sugar
- 200g glucose syrup
- 3 cups (750ml) single cream
- 150g chocolate halva, crumbled (you can substitute plain or other flavoured halva)
Method:
Combine the caster sugar and glucose syrup in a large saucepan. Cook over a medium heat, stirring occasionally, until the sugar dissolves and the mixture turns to a golden caramel.
Pour in the cream carefully (the mixture will bubble) and stir until well combined. Continue to cook for a few minutes until the mixture is smooth and the caramel is completely dissolved in the cream.
Remove from the heat and allow to cool to room temperature. Once cooled, place in the fridge until cold.
Churn the cooled caramel mixture in an ice-cream maker according to the manufacturer’s instructions.
When the ice cream has almost finished churning, add the crushed chocolate halva and stir.
Transfer to a freezer-safe container and freeze until firm.
Serve with additional crumbled halva on top for extra texture and flavour.
