Get ready to indulge in a rustic dessert that’s as easy to make as it is delicious to eat. Berry Campfire is the perfect blend of sweet, tart and comforting flavours.

Ingredients:

  • 2 cups (21 oz each) raspberry pie filling
  • 1 box yellow cake mix (regular size)
  • 1-1/4 cups water
  • 1/2 cup canola oil
  • vanilla ice cream (optional)

Method:

Prepare your grill or campfire for low heat using 16-20 charcoal briquettes or large wood chips.

Line an ovenproof Dutch oven with heavy-duty aluminium foil; add the raspberry pie filling.

In a large bowl, mix together the yellow cake mix, water and canola oil until well blended.

Spread the cake mixture over the pie filling in the Dutch oven.

Cover the Dutch oven with the lid. Place the Dutch oven directly on top of 8-10 of the charcoal briquettes or wood chips.

Using long-handled tongs, place the remaining briquettes on top of the Dutch oven lid.

Cook until the filling is bubbling and a toothpick inserted into the topping comes out clean, which should take about 30-40 minutes.

To check for doneness, carefully lift the lid with the tongs.
