Ingredients:
- 2 1/4 cups cake flour (plus more to grease the tins)
- 1 cup room temperature milk
- 6 egg whites (room temperature)
- 1 teaspoon vanilla extract
- 1 vanilla bean (scraped)
- 1 3/4 cups granulated sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- 12 tablespoons unsalted butter (softened)
- Sprinkles (Nonpareil, for decoration, optional)
- 16 tablespoons unsalted butter, softened
- 4 cups icing sugar
- 4 tablespoons milk
- 2 teaspoons vanilla extract
- 1 pinch of salt
Method:
Preheat your oven to 175°C (350°F) and lightly dust your cake tins with flour1.
In a large bowl, mix together the cake flour, granulated sugar, baking powder and salt1.
Add the softened butter to the dry ingredients and mix until the mixture resembles coarse crumbs1.
In a separate bowl, whisk together the milk, egg whites and vanilla1.
Gradually add the wet ingredients to the dry, mixing just until combined1.
Pour the mixture into the prepared cake tins1.
Bake in the preheated oven until a toothpick inserted in the centre of the cake comes out clean1.
While the cakes are cooling, prepare the icing by whisking together the softened butter, icing sugar, milk, vanilla and salt1.
When the cakes have cooled completely, glaze with the prepared icing and decorate with sprinkles if desired.
