Buttery Coconut Bars

Transport yourself to a tropical paradise with these Buttery Coconut Bars, a delicious confection that’s as indulgent as it is easy to make. With a rich, buttery base and luscious coconut topping, these bars are a coconut lover’s dream come true.

Ingredients:

  • 4 cups sweetened desiccated coconut, divided
  • 2 1/2 cups all-purpose flour (2 cups + 1/2 cup, divided)
  • 1 1/4 cups packed brown sugar (1 cup + 1/4 cup, divided)
  • 1 1/4 cups butter, melted (1 cup + 1/4 cup, divided)
  • 3 teaspoons vanilla extract
  • 1 14oz can sweetened condensed milk
  • 3 large eggs
  • 1/2 teaspoon salt

Method:

Preheat the oven to 175°C (350°F). Line a 13×9 inch baking pan with parchment paper, leaving the edges overhanging the sides.

For the crust, combine 2 cups flour, 1 cup brown sugar and 1/2 teaspoon salt in a large bowl. Add 1 cup melted butter and stir until evenly moistened. Press the mixture into the bottom of the prepared pan and bake until light brown, about 12 to 15 minutes. Remove the crust from the oven and cool on a wire rack for 10 minutes. Then reduce the oven temperature to 163°C (325°F).

For the filling, beat the eggs, 1/4 cup brown sugar, 1/4 cup melted butter, vanilla extract and sweetened condensed milk until well combined. Stir in 1/2 cup flour.

Stir 3 cups of the coconut into the filling mixture and spread over the cooled crust. Sprinkle the remaining 1 cup coconut on top.

Bake for 25-30 minutes or until the filling has set and the coconut is golden brown. Cool completely on a wire rack.

When cooled, lift out of the pan using the excess parchment paper and cut into bars.
