Chocolate cookies with nuts and chocolate chunks

Ingredients

  • Butter – 60 g
  • Dark chocolate (about 64% cocoa) – 200 g
  • Eggs – 2
  • Sugar – 150 g
  • Wheat flour – 50 g
  • Baking powder – 1/4 teaspoon
  • Optional: Nuts (e.g., pecans or walnuts) – 50 g

Preparation

  1. Put the chopped butter in a saucepan and start heating over low heat. Once it begins to melt, add 150 g of chocolate broken into pieces and melt completely while stirring. Remove from heat.
  2. Beat the eggs with sugar for about 5 – 7 minutes until fluffy.
  3. Add the chocolate mixture to the eggs and mix or slowly whisk until smooth. Add the flour and baking powder, and mix again to combine.
  4. Sprinkle the remaining chocolate (50 g) chopped into small pieces (and chopped nuts if using). Place in the freezer for 10 minutes (or in the refrigerator for about half an hour).
  5. Preheat the oven to 180 degrees Celsius.
  6. Line a large baking sheet with parchment paper.
  7. Spoon the mixture onto the baking sheet, leaving space between each (the dough does not need to be flattened). Bake for 10 minutes. Once out of the oven, the cookies will be soft in the middle; they will set after cooling.
