With a yogurt white chocolate glaze. Delicious blueberry muffins.
Ingredients
- Blueberries, 250 g
- Melted coconut oil or butter, 100 g
- Milk, 125 ml
- Eggs, 2
- Zest of 1/2 orange
- Wheat flour, 250 g
- Baking powder, 2 teaspoons
- Sugar, 170 g

- Blueberries
- Glaze (white chocolate, 50 g; milk, 2 tablespoons; yogurt, 1 tablespoon)
Preparation
Preheat the oven to 180°C. Line a muffin tin with 12 paper liners. Rinse and dry the blueberries.
In a bowl, pour the melted coconut oil or butter, add the milk, and mix. Then add the eggs and orange zest, and mix again.
In another bowl, sift the flour with the baking powder, add the sugar, and mix well.
Gently combine the ingredients from both bowls, add the blueberries (reserving 2 tablespoons for later), and mix gently.
Divide the batter evenly among the paper liners, sprinkle the reserved blueberries on top, and bake in the preheated oven for 25 minutes. After cooling, drizzle with the glaze.
Glaze: melt the chocolate with the milk, add the yogurt, and mix. After drizzling the muffins with the glaze, sprinkle with blueberries.
