Blueberry and Bran Muffins

Delicious muffins with forest blueberries. A simple dessert for any occasion.

Ingredients

  • Blueberries – 200 g
  • Bran (wheat or oat bran) or instant oats – 50 g
  • Milk – 125 ml
  • All-purpose flour – 200 g
  • Baking soda – 1 teaspoon
  • Baking powder – 1 teaspoon
  • Salt – a pinch
  • Eggs – 3
  • Sugar – 200 g
  • Sunflower oil or melted butter – 150 g

Preparation

To prepare, preheat the oven to 180°C (350°F). Line the muffin tin with 12 paper liners.

Wash and dry the blueberries.

Mix the bran or oats with the milk and set aside while you prepare the other ingredients.

In one bowl, sift the flour with the baking soda, baking powder, and salt, and mix. In another bowl, crack the eggs, add the sugar, and pour in the oil. Mix with a fork until combined.

Combine the dry ingredients with the egg mixture and the milk-soaked bran or oats. Gently fold in the blueberries with a spoon, mixing just until combined.

Divide the batter evenly among the muffin liners and bake for about 30 minutes, or until a toothpick inserted into the center comes out clean.
