Black Forest Cake

The cake perfectly combines cocoa sponge cake, a two-flavored cream made from whipped cream and mascarpone cheese, sour cherries, and a hint of tempting chocolate.

Ingredients

Cake

  • Eggs: 5 pieces
  • Cake flour: 0.75 cups
  • Sugar: 0.75 cups
  • Cocoa powder: 3 tablespoons

Cream

  • Mascarpone cheese: 500 grams
  • Heavy cream (36% fat content): 500 milliliters
  • Powdered sugar: 5 tablespoons
  • Cocoa powder: 3 tablespoons

Soaking

  • Cherry compote: 100 milliliters
  • Cherry liqueur: 50 milliliters

Additional

  • Cherries from the compote: 400 grams
  • Chocolate: 50 grams

Preparation

Prepare the sponge cake. Beat the egg whites until stiff peaks form (be careful not to overbeat). Gradually add sugar towards the end of beating, and then add one yolk at a time. Finally, gently fold in the flour sifted with cocoa in batches. Pour the batter into a cake tin lined with parchment paper (do not grease the sides) and place it in a preheated oven. Bake at 180 degrees Celsius for 30-40 minutes (until a toothpick comes out clean). Immediately after baking, remove the baking tray from the oven and drop it onto a cloth from a height of about 30-50 cm. Then return it to the oven with the cake and let it cool. Once the sponge cake has cooled, cut it into 3 layers.

Prepare the cream. Whip the chilled cream with powdered sugar until stiff peaks form, then gradually combine it with mascarpone cheese. Divide the cream into 2 parts: 3/4 and 1/4. Mix the larger portion with cocoa thoroughly. Set aside a bit of the cocoa cream to coat the sides of the cake.

Assembly. On a plate/platter, place the first layer of sponge cake, soak it, and spread half of the cocoa cream. Arrange cherries on the cream, then add another layer of sponge cake, soak it, add the remaining cocoa cream, cherries, the final soaked sponge cake layer, and the white cream. Use the reserved cocoa cream to coat the sides, and sprinkle the entire cake with chopped chocolate. (In short: sponge cake – soaking – cocoa cream – cherries – sponge cake – soaking – cocoa cream – cherries – sponge cake – soaking – white cream – chocolate.)
