Birthday Cake Watermelon Pizza

With just a few simple ingredients, you can create a treat that’s both refreshing and festive. This recipe is perfect for those warm days when you want something sweet without the heaviness of a traditional cake. It’s a conversation starter, a novel way to celebrate and a sure-fire hit with children and adults alike.

Ingredients:

  • 1 centre-cut slice of watermelon, 1 to 2 inches thick
  • ½ cup chocolate chips
  • 2 tablespoons half and half
  • 1 tablespoon coloured candy sprinkles

Method:

Start by cutting a slice of watermelon, about 1 to 2 inches thick, from the centre of the fruit. This will be your 'pizza base’.

Pat the watermelon slice dry with kitchen paper to remove excess moisture.

In a small saucepan, combine the chocolate chips and half-and-half.

Heat the mixture over low heat, stirring constantly, until the chocolate chips are completely melted and the sauce is smooth.

Pour the melted chocolate sauce over the watermelon slice, leaving a small rim around the edge to mimic a pizza crust.

While the chocolate is still warm, sprinkle the multi-coloured sprinkles over the top.

Place the watermelon pizza in the fridge for a few minutes to allow the chocolate to set.

Once set, slice the watermelon pizza into wedges and serve immediately.
