Ingredients:
- 2 2/3 cups all purpose flour
- 2 teaspoons vanilla extract
- 1/2 cup rainbow sprinkles
- 1/4 cup powdered sugar (for rolling)
- 1 stick (8 tablespoons) unsalted butter, softened
- 2 large eggs
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon kosher salt
- 1 1/4 cups granulated sugar, divided
Method:
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Whisk together the flour, baking powder and salt in a medium bowl.
In a large bowl, cream together the softened butter and 1 cup of the granulated sugar until light and fluffy.
Beat in the eggs one at a time, then add the vanilla extract.
Gradually fold in the dry ingredients until just combined, then fold in the rainbow sprinkles.
Chill the dough for 30 minutes to make it easier to handle.
Shape the dough into 1-inch balls, roll in the remaining 1/4 cup granulated sugar, then roll in the icing sugar to coat.
Place the balls on the prepared baking tray and flatten slightly with the bottom of a glass.
Bake for 10-12 minutes, until the edges have set but the centres are still soft.
Leave to cool on the tray for a few minutes before transferring to a wire rack to cool completely.
