Ingredients:
- 583g packet chocolate fudge cake mix
- 1/4 cup (60ml) chocolate frosting
- Icing sugar mixture, to dust
- 300g white chocolate melts (or pink candy melts)
- Pink food colouring gel
- Pink and purple sprinkles, to decorate
- For the Royal Icing:
- 1 cup (150g) pure icing sugar, sifted
- 1 egg white
Method:
Bake the chocolate fudge cake according to the instructions on the packet. Once baked, leave to cool completely.
Crumble the cooled cake in a large bowl until there are no large pieces left.
Stir in the chocolate icing until the mixture is well combined and can hold a ball shape.
Using your hands, roll the mixture into small golf ball sized balls.
Place the formed balls on a baking sheet lined with greaseproof paper and refrigerate for at least 1 hour to set.
In a mixing bowl, combine the sifted icing sugar and egg whites.
Whisk until smooth and thick enough to pipe.
Melt the white chocolate in a heatproof bowl over a pan of simmering water or in the microwave, stirring occasionally, until smooth.
If using white chocolate, add a small amount of pink food colouring gel to achieve the desired shade of pink.
Dip the tip of a cake pop stick into the melted chocolate and insert into a cake ball.
Dip the cake ball into the melted chocolate, making sure it’s completely covered.
Knock off any excess chocolate and decorate with sprinkles before the chocolate sets.
Pipe or drizzle royal icing over the cake pops for an extra decorative touch.
Dust with the icing sugar mixture for a sweet finish.
Place the cake pops in a piece of polystyrene or a cake pop stand to keep them upright.
Allow the chocolate to set completely, either at room temperature or in the fridge.
