Pancake Ingredients:
- 1 1/2 cups all purpose flour
- 2/3 cup yellow cake mix
- 1 tablespoon granulated sugar
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups milk
- 3 tablespoons rainbow sprinkles
- Ingredients for the glaze
- 1 cup icing sugar
- 1/2 teaspoon vanilla extract
- 1 tablespoon milk
Method:
Whisk together the flour, cake mix, sugar, baking powder and salt in a large bowl.
In a separate bowl, beat the eggs with the vanilla extract and milk.
Pour the wet ingredients into the dry and stir until just combined.
Fold in the Rainbow Sprinkles.
Heat a nonstick frying pan over a medium heat and lightly grease with butter or cooking spray.
Pour 1/4 cup of the mixture into the pan and cook until bubbles form on the surface, then flip and cook until golden brown.
In a bowl, whisk together the icing sugar, vanilla extract and milk until smooth.
Drizzle the glaze over the warm pancakes.
