Birthday Cake Blondies

Get ready to sprinkle some joy into your baking with these Birthday Cake Blondies, a colourful twist on the classic Blondie that’s sure to brighten up any celebration. These treats are like a birthday party in bar form, with all the fun and none of the fuss.

Ingredients:

  • 180g all purpose flour
  • 165g dark brown sugar
  • 1 tbsp vanilla extract
  • 4 tbsp rainbow sprinkles, plus 1 tsp for decoration
  • 90g white chocolate chips
  • 115g unsalted butter, melted
  • 2 large eggs, room temperature
  • 1/2 tsp kosher salt
  • 1 tsp baking powder
  • 100g granulated sugar

Method:

Preheat the oven to 175°C (350°F) and line a 9-inch square baking tin with parchment paper.

In a medium bowl, whisk together the flour, baking powder and salt.

In a large bowl, whisk together the melted butter, brown sugar and granulated sugar until well combined.

Add the eggs and vanilla extract to the sugar mixture and beat until smooth.

Gradually add the dry ingredients to the wet, beating until just combined.

Fold in the white chocolate chips and 4 tbsp of the rainbow sprinkles.

Pour the mixture evenly into the prepared tin and sprinkle with the remaining 1 tsp Rainbow Sprinkles.

Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the centre comes out clean.

Allow the blondies to cool completely in the tin before cutting into squares.
