Extraordinary beer-infused muffins with delicious frosting and fresh raspberries. You definitely have to try them!
Ingredients
- Eggs – 3 pcs.
- Sugar – 440 g
- Cocoa powder – 120 g
- Light cream (18%) – 120 g
- Beer – 350 ml
- Butter – 100 g
- Wheat flour – 340 g
- Baking soda – 1 teaspoon
Frosting
- Confectioners’ sugar – 180 g
- Cream cheese – 200 g
- Frozen raspberries – 100 g
- Butter – 50 g
Preparation
- Mix cocoa, sugar, flour, and baking soda together in a large bowl.
- Melt the butter and combine it with the beer. While constantly mixing, add the eggs one by one, then the cream. Gradually add the dry ingredients to the wet ones while mixing constantly.
- Transfer the batter to muffin molds, filling them up to 3/4 full. Bake at 180 degrees Celsius for about 12 minutes (until a toothpick comes out clean). Remove the baked muffins and let them cool on a rack.
- Meanwhile, prepare the frosting. Cream the cream cheese and butter until smooth. While continuously mixing, gradually add the confectioners’ sugar. Make a purée from the raspberries, then add them to the frosting mixture. Mix until well combined. Chill in the refrigerator.
- Decorate the cooled muffins with raspberry frosting.
