Delicious, moist muffins, full of bananas and chocolate, perfect for any gathering – loved by both kids and adults!
Ingredients:
- Baking powder: 1.5 teaspoons
- Eggs: 2
- Bananas: 3
- Brown sugar: 150 g
- Vanilla sugar: 1 packet
- Dark chocolate: 50 g
- Milk chocolate: 50 g
- Butter: 100 g
- Cake flour: 260 g
Frosting:
- Bananas: 2
- Eggs: 3
- Sugar: 50 g
- Cocoa: 45 g
- Lemon juice: 1 tablespoon
- Butter: 250 g
Preparation:
Peel bananas and break into smaller pieces, then place them in a bowl and mash using a potato masher. Beat 2 eggs and brown sugar with a mixer. Melt the butter.
Chop the milk and dark chocolate into smaller pieces. Add melted butter to the mashed bananas and mix.
Sift flour into the banana mixture, stir, then add 1 and 1/2 teaspoons of baking powder, chopped chocolate, eggs beaten with sugar, and vanilla sugar. Mix all the ingredients thoroughly.
Line a muffin tin with paper liners and fill them with the banana mixture using a pastry bag until they are 3/4 full.
Bake the muffins for about 20-25 minutes in an oven preheated to 160°C with convection function (if your oven doesn’t have a convection function, bake the muffins at 170°C).
Frosting: Place bananas in a blender bowl, add sugar, cocoa, 3 egg yolks, and a few drops of lemon juice. Mix everything with a hand blender. Pour the blended ingredients into a saucepan, then heat to a temperature of about 83°C (stir frequently). Let it cool in a cool place, then refrigerate.
Beat the softened butter with a mixer until fluffy. Add the cooled frosting to the well-aerated butter and mix.
Transfer the frosting to a pastry bag with a serrated tip.
Once the muffins are cooled, decorate them with the chocolate-banana frosting (you can also use various colored sprinkles or dried fruits for decoration).
