Banana Bread Cake

This banana cake is moist and delicious. It’s perfect for brunch or dessert! If you can’t eat it all at once, freeze it.

Ingredients:

  • 3 ripe bananas, mashed
  • 1/2 cup melted butter or vegetable oil
  • 1/2 cup granulated sugar
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • optional additions: chopped nuts, chocolate chips, cinnamon

Method:

Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.

In a large mixing bowl, combine the banana puree, melted butter or oil, sugar, eggs and vanilla extract. Whisk until well combined.

In a separate bowl, whisk together the flour, baking powder, baking soda and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Take care not to overmix.

If desired, fold in any optional ingredients such as chopped nuts, chocolate chips or cinnamon.

Pour the mixture into the prepared loaf tin and spread evenly.

Bake in a preheated oven for 50-60 minutes, or until a toothpick inserted in the centre comes out clean.

Leave to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely before slicing.
