Baked Oatmeal Brownie

Baked Oatmeal Brownie

A touch of sweetness to start your day off right. And believe me – it will be really good.

Ingredients

  • 1 cup rolled oats (100 g)
  • 1 and 3/4 cups milk (regular or plant-based)
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons brown sugar
  • 1 tablespoon maple syrup or honey
  • a pinch of cinnamon
  • 2 tablespoons peanut butter
  • 50 – 100 g dark or semi-sweet chocolate
  • 1 cup fresh raspberries or 1/2 cup frozen raspberries

Preparation

Preheat the oven to 180°C (350°F). Pour oats into ovenproof dishes (enough to fill them halfway) – you can use several small ramekins or one larger baking dish.

Heat the milk almost to boiling with cocoa powder, sugar, maple syrup or honey, cinnamon, and peanut butter. Stir the ingredients together while heating.

Pour the milk mixture over the oats in the dishes, leaving about 1 – 2 cm space from the top.

Add finely chopped chocolate to each dish, then top with raspberries.

Bake in the oven for about 20 – 25 minutes.
