Avocado Ice Cream

Experience creamy and refreshing Avocado Ice Cream, a unique dessert that combines the rich, buttery flavour of ripe avocados with the zesty tang of lemon and lime. Sweetened with agave nectar and enriched with coconut milk, this unconventional ice cream offers a tropical twist that’s both indulgent and healthy.

Ingredients:

  • 3 ripe avocados, halved, pitted and peeled
  • Juice of 2 lemons
  • Juice of 2 limes
  • Peel of 1 lemon
  • Zest of 1 lime
  • 1 14oz can unsweetened coconut milk
  • 1 cup agave nectar, or more to taste
  • ¼ cup corn syrup (optional, for extra sweetness and smoother texture)

Method:

In a blender or food processor, combine the avocado flesh, lemon juice, lime juice, lemon zest and lime zest. Blend until smooth and creamy.

Add the coconut milk and agave nectar to the blended avocado mixture. Blend again until all ingredients are well incorporated. Taste and add more agave nectar if you prefer a sweeter ice cream.

If using, stir in the corn syrup to prevent ice crystals forming and for a smoother ice cream texture.

Pour the mixture into an ice-cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

Transfer the churned ice cream to an airtight container and freeze until firm, usually about 4-6 hours.

When the ice cream has set, scoop and serve immediately. Enjoy your homemade avocado ice cream!
