Asian Mini Mango and Coconut Doughnuts

The original version of oriental doughnuts without eggs, based on sweet mango with the addition of coconut flakes, are a great alternative to the classic doughnut, symbolizing Fat Thursday.

Ingredients

  • Mango: 1 piece
  • Wheat flour: 240 g
  • Baking powder: 1 teaspoon
  • Sugar: 80 g
  • Coconut flakes: 50 g
  • Spirytus (optional): 1 large tablespoon
  • Salt: a pinch
  • Powdered sugar: 4 teaspoons
  • Oil: 1 liter

Instructions

  1. Peel the mango, chop it into cubes, and blend it until smooth.
  2. Sift the flour into a bowl, add baking powder, sugar, coconut flakes, spirits (if using), a pinch of salt, and mix everything thoroughly using a mixer. Then add the mango, mix again thoroughly, and refrigerate for about 30 minutes.
  3. After this time, form the dough into a roll, cut it into 16 pieces, and shape each piece into a ball.
  4. Drop the prepared doughnuts into hot, deep oil and fry them over low heat, turning them during frying.
  5. Once fried, let the mini doughnuts cool down and dust them with powdered sugar.
