Apricot Macaroons

These chewy treats combine the tangy taste of apricots with the exotic flair of coconut, all enveloped in a velvety dark chocolate base. Simple, fruity and utterly irresistible, they’re a breeze to make and a delight to eat.

Ingredients:

  • 100g dried apricots, finely chopped
  • 4 cups grated coconut
  • 395g tin sweetened condensed milk
  • 100g dark chocolate, melted

Method:

Preheat the oven to 160°C. Line a baking tray with baking paper.

In a large bowl, mix together the finely chopped dried apricots and shredded coconut.

Pour in the sweetened condensed milk and stir until well combined. The mixture should be sticky and cohesive.

Dollop small amounts of the mixture into round shapes. Place on the prepared baking tray.

Bake for 12-15 minutes or until golden.

Remove from the oven and leave to cool on the tray for a few minutes before transferring to a wire rack to cool completely.
