Ammonia Cookies

Delicious cookies for a delightful dessert. Impress your whole family!

Ingredients

  • 1/4 cup sour thick cream
  • 1/2 teaspoon ammonium bicarbonate (ammonia)
  • 250 g flour
  • 125 g cold butter
  • 16 g (1 packet) vanilla sugar
  • 150 g sugar
  • 3 egg yolks (or 1 whole egg)

Preparation

Mix the ammonia with the sour cream. In a bowl or on a pastry board, pour the flour, add the chopped cold butter, vanilla sugar, cream with ammonia, and 50 g of sugar (reserve the remaining sugar). Knead the shortcrust pastry by cutting the ingredients with a knife or mixer paddle or rubbing with your fingers until a fine crumble forms. Then add the egg yolks or whole egg and knead into a smooth dough, forming a ball.

Roll out the dough lightly, then sprinkle the remaining sugar on the pastry board, place the dough on it, and roll out to a thickness of about 1/2 cm. Use cookie cutters to cut out the cookies, trying to leave as few scraps as possible. Place the cookies, sugar side up, on a baking sheet lined with parchment paper. Place in a preheated oven at 180°C and bake until lightly browned, about 15 minutes (there will be a strong smell during baking, but it will completely disappear after baking). Combine the remaining dough into one piece, roll out, cut, and bake the next batch of cookies.
