This dessert is a beautiful blend of textures and flavours, with the creamy mascarpone contrasting with the crunch of the amaretti biscuits and the tangy sweetness of the apricots. It’s the perfect end to any meal!
Ingredients:
- 1kg apricots, halved and pitted
- Peel and juice of 1 large orange
- 85g golden caster sugar
- 2 x 250g tubs of mascarpone
- 500g vanilla custard
- 140g amaretti biscuits
- 50g grated dark chocolate
Method:
Place the apricot halves, orange zest, orange juice and half the caster sugar in a saucepan.
Cook over a medium heat until the apricots are soft and the mixture has thickened slightly.
Allow to cool, then refrigerate.
In a bowl, whisk together the mascarpone, vanilla pudding and remaining icing sugar until smooth.
Break the amaretti biscuits into small pieces.
Layer the chilled apricot mixture, mascarpone mixture and amaretti biscuits in serving glasses or a large trifle dish.
Repeat the layers until all the ingredients have been used, finishing with a layer of mascarpone.
Sprinkle the grated dark chocolate over the top layer for a rich finish.
Refrigerate the dessert for at least 1 hour to allow the flavours to meld.
Serve chilled and enjoy the creamy, fruity and crunchy combination.
