Delicious lime cheesecake bites in chocolate cups. Prepare this exquisite dessert to impress your guests.
Ingredients
Crust:
- Butter – 50 g
- Dark chocolate – 100 g
- Chocolate chip cookies – 200 g
Filling:
- Egg – 1
- Powdered sugar – 25 g
- Fresh lime juice – from 1 lime
- Heavy cream – 75 ml
- Cream cheese – 75 g (mascarpone can be used as well)
- Gelatin – 1 teaspoon
- Dark chocolate – 50 g
Instructions
Melt the butter and chocolate together and mix with finely crushed or ground cookies. Press the mixture into the bottom of metal or silicone molds, or into a muffin tin lined with paper liners. Chill in the refrigerator.
Whisk the egg yolk with powdered sugar until fluffy. In a separate bowl, whip the cream and then fold in the cream cheese. Mix this into the egg yolk mixture.
Dissolve the gelatin in lime juice, ideally using a heatproof bowl placed over a pot of simmering water. Let it cool slightly and then fold it into the cream cheese mixture.
Gently fold the whipped egg whites into the cream cheese mixture. Spoon the filling into the prepared crusts and decorate with melted dark chocolate.
