An ideal snack for any occasion. How to prepare chocolate muffins? With this simple recipe, it won’t be a challenge. The cream cheese filling gives the dessert a unique aroma.
Ingredients
Cream Cheese Filling:
- cream cheese: 125 g
- sugar: 2 tablespoons
- all-purpose flour: 1 teaspoon
- egg: 1
Muffin Batter:
- all-purpose flour: 1 1/2 cups
- sugar: 3/4 cup
- cocoa powder: 1/4 – 1/3 cup
- baking soda: 1 teaspoon
- salt: 1/3 teaspoon
- water: 1/2 cup
- buttermilk or plain yogurt: 1/2 cup
- vegetable oil or olive oil: 1/3 cup
- white vinegar: 1 tablespoon
- vanilla extract (optional): 1 teaspoon
Preparation:
Cream Cheese Filling:
Mash the cream cheese with a fork or blend it in a food processor, then mix with the sugar, flour, and egg white (the yolk can be added to the muffin batter, but it’s not necessary). Place in the freezer for about 30 minutes.
Preheat the oven to 175°C (350°F). Line a muffin tin with paper liners (5 cm in diameter, 80 ml capacity – 1/3 cup).
Muffin Batter:
Sift the flour into a bowl, add the sugar, cocoa powder, baking soda, and salt, and mix. Make a well in the center and pour in the water, buttermilk or yogurt, oil, and vinegar. Add the vanilla extract (if using) and the remaining egg yolk from the cream cheese filling. Gently combine the ingredients by stirring with a spoon.
Fill the paper liners to 1/3 of their height with the batter (about 1 tablespoon per portion). Place a heaping teaspoon of the slightly frozen cream cheese filling in the center and cover with the remaining batter (the muffins will rise, so fill the liners to about 2/3 of their height).
Place in the oven and bake for 25 minutes. After this time, a toothpick inserted in the center should come out dry. The muffins are best when the cream cheese filling has set.
