Combining the creamy sweetness of coconut rum and coconut cream with the tangy brightness of pineapple and lime juice, this spritz is brightened up with a splash of seltzer, making it the perfect effervescent drink for warm weather gatherings or a relaxing evening at home.
Ingredients:
- 2 oz. Coconut Rum
- 2 oz. pineapple juice
- 1/4 oz (or more) fresh lime juice
- 2 tablespoons coconut cream
- ICE
- 4 oz. plain or coconut seltzer
- Maraschino cherries and/or pineapple slices, to serve (optional)
Method:
In a shaker or mixing glass, combine the coconut rum, pineapple juice, fresh lime juice and cream of coconut.
Shake or stir well to ensure the cream of coconut is fully incorporated.
Fill a tall glass with ice.
Pour the shaken mixture over the ice.
Top with plain or coconut seltzer and gently stir to combine.
Garnish with maraschino cherries and/or pineapple slices if desired.
