Ingredients:
- 6 3/4 ounces all-purpose flour (1 1/3 cups; 190g), plus extra for dusting
- 2 teaspoons baking powder
- 2 teaspoons sugar
- 1 1/2 teaspoons Diamond Crystal Kosher Salt
- 8 ounces sharp yellow cheddar cheese, finely grated
- 8 ounces heavy cream (1 cup; 225g)
- For the egg wash
- 1 large egg
- 1 large egg yolk
- 1/2 ounce water (1 tablespoon; 15g)
- 1/4 teaspoon Diamond Crystal Kosher Salt, plus more for sprinkling
Method:
Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, sugar and kosher salt.
Add the grated cheddar cheese to the flour mixture and toss to coat.
Pour in the heavy cream and stir to form a dough.
On a floured surface, roll out the dough to about 1/8 inch thick.
Cut into 1 inch squares and place on the prepared baking sheet.
Prick each square with a fork to prevent it from rising during baking.
Make the egg wash by whisking together the egg, yolk, water and salt.
Brush each square with the egg wash and sprinkle with extra kosher salt.
Bake for 15-17 minutes or until puffy and golden brown.
