Ingredients:
- 1/2 cup granulated sugar
- 1/4 cup corn syrup
- 2 tablespoons honey
- 2 tablespoons water
- Pinch of kosher salt
- 2 tablespoons butter
- 2 teaspoons pure vanilla extract
- 1 1/3 cups dark roasted peanuts
- 1/4 cup toasted sesame seeds
- 1/2 teaspoon baking powder
Method:
Line a baking sheet with parchment paper and lightly grease it. Set aside.
In a medium saucepan over medium heat, combine the sugar, corn syrup, honey, water and salt. Stir until the sugar is completely dissolved.
When the sugar mixture begins to boil, insert a candy thermometer and continue to cook without stirring until the temperature reaches 300°F (the hard crack stage).
Remove the pan from the heat and carefully stir in the butter, vanilla extract, peanuts and sesame seeds. Be careful as the mixture will bubble.
Quickly stir in the baking powder; the mixture will become light and foamy.
Immediately pour the brittle mixture onto the prepared baking tray and spread evenly.
Leave to cool completely at room temperature. When hardened, break into pieces.
