Sweet pancakes made from sweet potatoes. How to prepare this delicious dish?
Ingredients
- 1 sweet potato
- 100 g natural yogurt
- 2 eggs
- 2 tablespoons coconut oil or butter
- 2 tablespoons sugar
- 1 tablespoon vanilla sugar
- 1/2 teaspoon cinnamon
- Pinch of nutmeg
- 1 teaspoon grated orange zest
- 200 g (1 1/3 cups) all-purpose flour
- 2 teaspoons baking powder
- Pinch of salt
- For serving: maple syrup, banana, pecans
Preparation:
- Prepare the Sweet Potato:
- Peel the sweet potato and cut it into pieces.
- Bake at 190°C (375°F) for 20 minutes until tender, then let it cool.
- Measure out 200 g of the baked sweet potato and blend it into a purée.
- Make the Batter:
- In a bowl, mix the sweet potato purée with yogurt, eggs, coconut oil (or butter), sugar, vanilla sugar, cinnamon, nutmeg, and orange zest.
- Sift the flour with the baking powder and a pinch of salt into the mixture.
- Stir everything together until smooth and well combined. You can also blend it on low speed for a short time.
- Cook the Pancakes:
- Heat a skillet and lightly grease it with oil.
- Spoon 2 tablespoons of batter per pancake onto the skillet, keeping them spaced apart.
- Smooth out the batter if needed.
- Cook over medium heat until the pancakes rise and become golden brown, about 2.5 minutes.
- Flip and cook the other side until golden, about 2 minutes.
- Wipe the skillet with a paper towel before cooking the next batch.
- Serve:
- Serve the pancakes warm with maple syrup, banana slices, and pecans.
