Imagine the pleasure of biting into a warm, sugary doughnut, now imagine the same pleasure in the form of a pancake. This jam doughnut pancake recipe gives you the best of both worlds, combining the fluffy tenderness of pancakes with the sweet, fruity burst of jam doughnuts.
Ingredients:
- 2 eggs
- 300ml milk
- 250g self raising flour
- 2 teaspoons baking powder
- 25g caster sugar
- 50g unsalted butter, melted, plus extra for frying
- 12 tbsp (about 75g) strawberry jam
- Granulated sugar, to serve
Method:
Whisk the eggs and milk together in a large mixing bowl.
Sift in the self-raising flour and baking powder, then add the caster sugar.
Mix all the ingredients together until you have a smooth batter.
Stir in the 50g melted butter.
Heat a non-stick frying pan over a medium heat and brush with some of the melted butter.
Pour in rounds of batter to form pancakes. Cook for about 2 minutes or until bubbles appear on the surface, then flip and cook for a further 1-2 minutes until golden.
When cooked, transfer the pancakes to a plate.
While still warm, spread a teaspoon of strawberry jam on one side of each pancake.
Sprinkle the jam side with granulated sugar to mimic the sugary coating of a doughnut.
Serve warm for a delicious twist on the classic doughnut in pancake form!
