Pantry Cocoa Brownies

These brownies are rich, fudgy and perfect for chocolate lovers. The recipe is simple and doesn’t require any fancy equipment, making it an excellent choice for a quick dessert or a baking project with the kids. The combination of cocoa powder and oil creates a deep chocolate flavour, while the caster sugar and brown sugar provide the perfect sweetness.

Ingredients:

  • 2/3 cup neutral oil (canola or vegetable)
  • 2/3 cup natural cocoa powder
  • 1/2 cup all purpose flour
  • 1 1/3 cups icing sugar
  • 2/3 cup packaged dark brown sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 teaspoon fine salt
  • 1/4 teaspoon baking powder
  • Cooking spray

Method:

Preheat the oven to 175°C (350°F). Lightly grease an 8-inch square baking tin with cooking spray.

In a medium bowl, whisk together the oil and cocoa powder until smooth.

Add the icing sugar and brown sugar and mix well.

Whisk in the vanilla extract and the eggs, one at a time, making sure each egg is fully incorporated before adding the next.

Sift the flour, salt and baking powder into a separate bowl.

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Take care not to overmix.

Pour the mixture into the prepared tin and smooth down the top with a spatula.

Bake for 20-25 minutes or until a toothpick inserted in the centre comes out with a few moist crumbs.

Allow the brownies to cool in the pan before cutting into squares.
