Fluffy Confetti Birthday Cake

This cheerful confection is a feast for the eyes and the palate, with colourful sprinkles dancing through every tender crumb. Perfect for birthdays or any festive occasion, this cake will bring the party to your taste buds with its sweet vanilla flavour and cheerful burst of colour.

Ingredients:

  • 2 3/4 cups all-purpose flour, plus extra for the tins
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon fine salt
  • 1/2 cup vegetable oil
  • 5 large eggs, room temperature
  • 1 cup milk
  • 1 tablespoon pure vanilla extract
  • 3 tablespoons rainbow sprinkles, plus more for decoration
  • For the frosting
  • 3 sticks (1 1/2 cups) unsalted butter, softened
  • 3 1/4 cups powdered sugar
  • 2 teaspoons pure vanilla extract
  • 1/4 cup milk
  • Pinch of fine salt

Method:

Preheat the oven to 175°C (350°F). Butter and flour two 9-inch round cake tins.

In a large bowl, whisk together the flour, granulated sugar, baking powder and salt.

In a separate bowl, beat the eggs, vegetable oil, milk and vanilla extract until well combined.

Gradually add the wet ingredients to the dry, beating until just combined.

Gently fold in the rainbow sprinkles.

Divide the mixture evenly between the prepared tins and bake for 25-30 minutes, or until a toothpick inserted in the centre comes out clean.

Cool the cakes in the racks for 10 minutes, then transfer to a wire rack to cool completely.

Cream the butter in a large bowl.

Gradually add the icing sugar, vanilla extract, milk and a pinch of salt, beating until smooth and fluffy.

Place one cake layer on a cake platter and spread a layer of icing on top.

Place the second cake layer on top and cover the top and sides with the remaining icing.

Decorate with additional rainbow sprinkles.
