Paleo & Keto Mint Chocolate Chip Ice Cream is a delicious and health-conscious dessert that combines the creamy texture of ice cream with the refreshing taste of mint and the rich flavour of chocolate chips. This version is low in carbohydrates and dairy free, making it suitable for those following paleo, keto or vegan diets.
Ingredients:
- 50g avocado
- 1/2 teaspoon vanilla extract
- 1/2-3/4 tsp peppermint extract (to taste)
- 2-4 tablespoons powdered xylitol (or sweetener of choice, to taste)
- 30-45g chocolate chips (or chopped cocoa nibs, to taste)
- 1/2 teaspoon freshly squeezed lemon juice
- 110g full fat coconut milk (or heavy cream, whipped)
- Pinch of flaky sea salt (or salt to taste)
Method:
Place the avocado, vanilla extract, peppermint extract, xylitol powder and lemon juice in a blender. Blend until smooth.
Add the coconut milk (or whipped cream) and a pinch of sea salt to the blender. Blend again until well combined.
Fold in the chocolate chips or chopped cocoa nibs by hand.
Pour into an ice-cream maker and churn according to the manufacturer’s instructions.
Once churned, transfer the ice cream to a freezer-safe container and freeze until firm, usually about 4 hours or overnight.
Serve your Paleo & Keto Mint Chocolate Chip Ice Cream with an extra sprinkle of chocolate chips or cacao nibs on top, if desired.
