Ingredients:
- 3 bananas (very ripe)
- 1/2 teaspoon vanilla extract
- 1 1/2 cups all purpose flour
- 1 cup semi-sweet chocolate chips (halved)
- 1/2 cup unsalted butter (8 tablespoons softened)
- 2 large eggs (room temperature)
- 2/3 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Method:
Preheat the oven to 180°C (350°F). Grease a loaf tin and set aside.
In a large bowl, mash the bananas until smooth. Stir in the melted butter and vanilla extract.
Add the sugar and eggs and mix well. Add the baking powder and salt and mix well.
Gradually add the flour and mix until just combined. Be careful not to overmix.
Fold in 3/4 cup of the chocolate chips. Pour the batter into the prepared loaf pan.
Sprinkle the remaining 1/4 cup chocolate chips over the top.
Bake for 50 minutes to an hour, or until a toothpick inserted in the centre comes out clean.
Let the bread cool in the pan for a few minutes, then transfer to a wire rack to cool completely before serving.
