This delicious frozen dessert combines the irresistible flavour of Snickers chocolate bars with creamy caramel ice cream. The crust is made from crushed Butternut Snap cookies mixed with melted butter. It provides a sweet and crunchy base for the cake. Softened caramel ice cream is spread over the crust. The caramel flavour pairs perfectly with Snickers bars.
Ingredients:
- 2 x 250g packets of Butternut Snap cookies
- 125g butter, melted
- 1 litre caramel ice cream
- 2 x 55g Snickers chocolate bars, thinly sliced
- 1/4 cup unsalted roasted peanuts, roughly chopped
- Salted caramel sauce (to serve)
Method:
Crush the Butternut Snap cookies (you can use a food processor or put them in a plastic bag and crush them with a rolling pin).
Mix the crushed cookies with the melted butter until well combined.
Press the mixture into the base of a pie tin to form the crust.
Freeze the crust for at least 15 minutes to set.
Allow the caramel ice cream to soften slightly (but not melt completely).
Spread a layer of the softened ice cream over the crust.
Place the thinly sliced Snickers bars on top of the ice cream.
Sprinkle the chopped peanuts evenly over the Snickers layer.
Add another layer of softened ice cream on top of the peanuts.
Sprinkle more chopped Snickers bars over the ice cream.
Drizzle with extra caramel sauce if desired.
Cover with plastic wrap or foil.
Freeze for at least 4 hours or until set.
Before serving, drizzle with extra caramel sauce and sprinkle with sea salt if desired.
