Rhubarb and Apple Compote with Mint

A delightful idea for a refreshing spring beverage.

Ingredients

  • 1 apple
  • 4 stalks of rhubarb
  • 1 liter of water
  • 2 sprigs of mint
  • 2 teaspoons of vanilla sugar or 1 teaspoon of vanilla extract
  • 1 tablespoon of sugar, or to taste

Preparation

  1. Bring water to a boil in a pot. Add the chopped apple and rhubarb, season with vanilla and sugar, and bring to a boil.
  2. Add mint and simmer for about 2 – 3 minutes until the fruits are soft. Remove from heat and preferably let it cool in the pot.
  3. Pour the compote into a pitcher, add a few pieces of cooked fruit, and garnish with fresh mint.
