Ingredients:
- 2 cups self-raising flour
- 2 tablespoons caster sugar
- 500ml (2 cups) milk
- 2 eggs, lightly whisked
- 40g butter, melted, plus extra for greasing
- Mixed berries, to serve
- Maple syrup, to serve
Method:
In a large bowl, combine the self-raising flour and caster sugar.
Make a well in the centre and add the milk, eggs and melted butter. Whisk together until you have a smooth batter.
Preheat your fryer to 180°C (350°F). If your fryer requires preheating, follow the manufacturer’s instructions.
Lightly grease the fryer basket or use cut-to-size parchment paper to prevent sticking.
Pour the batter into the fryer basket to make the desired size pancakes. You may need to cook in batches depending on the size of your fryer.
Cook for about 8-10 minutes, turning half way through, or until golden brown and cooked through.
Serve hot with mixed berries and a generous drizzle of maple syrup.
