An original ice cream flavor created by combining plum compote with a noticeable hint of honey and walnuts.
Ingredients:
- Bananas – 2 pieces
- Sugar – 30 g
- Honey – 75 g
- Walnuts – 50 g
- Plums – 250 g
- Apple juice – 75 ml
- Heavy cream (30%) – 200 g
Preparation:
Step 1: Prepare the Plums Wash the plums, remove the pits, and slice the flesh. Boil with apple juice and 25 g of honey. Cook on low heat for about 10 minutes until soft. Let cool.
Step 2: Prepare the Walnuts Lightly toast the walnuts in a pan without any oil, let them cool, and then coarsely chop.
Step 3: Prepare the Cream Base Heat the heavy cream until it boils. In a separate bowl, beat the egg yolks with the remaining honey and sugar until creamy. Slowly add the hot cream while stirring constantly. Place the mixture in a hot water bath and whisk for about 7 minutes until it slightly thickens. Remove from the water bath and let cool, stirring occasionally.
Step 4: Combine and Freeze Add the chopped walnuts to the cream mixture and stir. Pour the mixture into a rectangular dish and place it in the freezer for 1 hour. Stir once, pour the plum compote over it, and gently swirl the layers with a fork. Leave the ice cream in the freezer for at least 6-8 hours or overnight.
Step 5: Serve Before serving, take the ice cream out of the mold and cut it into pieces.
