Pumpkin Donuts

Pumpkin is a wonderful vegetable! Try delicious donuts with the addition of pumpkin puree!

Ingredients

Dough

  • Sugar – 50 g
  • Powdered sugar – 100 g
  • Eggs – 2
  • Vanilla – 3 g
  • Butter – 20 g
  • Wheat flour – 300 g
  • Canola oil – 1 liter
  • Baking powder – 1.5 teaspoons
  • Gingerbread spice – 0.5 teaspoon
  • Pumpkin puree – 200 g
  • Vanilla flavored cream cheese – 100 g
  • Baking soda – 0.25 teaspoon
  • Salt – 2 pinches
  • Spirit – 2 teaspoons

Decoration

  • Powdered sugar – 5 g
  • White chocolate – 100 g

Preparation

Step 1: Bake the Pumpkin

Cut the pumpkin into pieces, remove the seeds. Place on a baking sheet lined with parchment paper and bake at 160°C for 30-40 minutes. Peel the cooled pumpkin, place it in a blender, and puree.

Step 2: Heat the Oil

In a large pot, heat 1 liter of oil over low heat.

Step 3: Combine Dry Ingredients

In a bowl, combine all dry ingredients – flour, powdered sugar, gingerbread spice, baking powder, and baking soda. Split the vanilla bean lengthwise, scrape out the seeds with the back of a knife, and add to the ingredients. Mix. Add salt.

Step 4: Combine Wet Ingredients

In a tall container, beat eggs with sugar. Add to the dry ingredients along with softened butter, cream cheese, and pumpkin puree. Mix everything. Add the spirit and continue to mix with a spoon.

Step 5: Knead the Dough

Sprinkle the countertop with flour and knead the dough. If it’s too loose, add more flour. Roll out to a thickness of about 1 cm. Cut out circles with a diameter of 10 cm. Make holes in the center with a diameter of 3 cm (using glasses or cookie cutters).

Step 6: Fry the Donuts

Drop a piece of dough into the hot oil – if it fries to a golden color (about 160°C), the temperature is right. Fry the donuts on both sides until golden brown and place on paper towels to drain excess oil.

Step 7: Decorate

Sprinkle the donuts with powdered sugar or drizzle with melted white chocolate.
