Mini tarts are the perfect idea when you want to prepare a dessert for just a few people. Try this one with oranges.
Ingredients
- Sugar – 30 g
- Powdered sugar – 60 g
- Orange – 1
- Orange jam – 60 g
- Icing – 12 g
- Butter – 100 g
- Wheat flour – 10 g
- Wheat flour – 175 g
- Orange juice – 250 ml
- Orange juice – 50 ml
- Salt – a pinch
- 18% cream – 125 g
- Butter – 15 g
- Egg – 1
Preparation:
Step 1: Bake the Tartlets
Cut the butter into cubes and quickly knead it with the remaining ingredients. Wrap the dough in plastic wrap and refrigerate for 1 hour. Then roll it thinly to a thickness of 3 mm, sprinkling with a little flour. Line 8 greased tartlet molds (each about 10 cm in diameter) with the dough, forming edges. Prick the dough several times with a fork, cover with parchment paper, and weigh down with dried beans/peas. Bake the tartlets in a preheated oven at 200°C for 8–10 minutes.
Step 2: Bake the Cream
Mix the cream ingredients with a whisk in a bowl until combined. Remove the tartlets from the oven, remove the parchment paper and dried beans/peas. Spread the cream on the bottoms and bake at the same temperature for another 15–18 minutes. Cool on a rack, then remove from the molds.
Step 3: Prepare the Glaze
Peel the oranges thoroughly, including the white skin. Cut into 8 slices, placing one on each tartlet. Mix sugar, powdered cake icing, and orange juice in a saucepan and bring to a boil. Cool for 1 minute, then coat the tarts with a thin layer of glaze. Cool.
