Ingredients:
- Sugar – 110 g
- Dark chocolate (>70% cocoa) – 125 g
- Milk chocolate – 125 g
- Egg – 2 pcs.
- Cocoa powder – 30 g
- Butter – 115 g
- Wheat flour – 60 g
- Salt – 1 pinch
Preparation:
Step 1: Prepare the baking pan Grease the muffin pan with olive oil (silicone molds do not need to be greased).
Step 2: Melt the chocolate in a water bath Break the 70% chocolate into smaller pieces and melt it together with the butter in a water bath. Set aside to cool.
Step 3: Combine dry and wet ingredients In another bowl, sift the flour, cocoa powder, and salt. Set aside. Using a mixer, beat the eggs with sugar for about 5 minutes, until fluffy and creamy. Reduce the mixer speed and slowly pour in the chocolate mixture. Turn off the mixer and add the mixture of dry ingredients. Mix everything vigorously using a silicone spatula, until the ingredients are combined (do not overmix).
Step 4: Bake the muffins Pour the batter into the prepared pan, filling it to about ¾ height. Place a piece of 46% chocolate into each muffin. Bake the muffins in the oven for 15 minutes. CAUTION! Do not leave the muffins in the oven for too long, as they will dry out. Remove the muffins from the oven and let them cool.
