Ingredients:
- 1 (24oz) container of full fat cottage cheese
- 1/2 cup peanut butter
- 1/3 cup pure maple syrup
- 2 tablespoons powdered peanut butter
- 1 tablespoon sugar-free peanut butter syru
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
Method:
Blend the cottage cheese in a food processor or blender until completely smooth.
Add the peanut butter, maple syrup, peanut butter powder, peanut butter syrup, vanilla extract and salt to the blended cottage cheese.
Blend again until all the ingredients are well incorporated and the mixture is smooth.
Pour the mixture into an ice-cream maker and churn according to the manufacturer’s instructions.
Once churned, the ice cream will have a soft-serve consistency. For a firmer texture, transfer to an airtight container and freeze for at least 2 hours.
