Ingredients

For the Cantuccini Cookies:

  • Egg – 2 pieces
  • Brown sugar – 150 g
  • Wheat flour – 250 g
  • Almonds – 100 g
  • Grated lemon zest – 2 tablespoons
  • Baking powder – 5 g
  • Salt – 1 pinch

Additionally

  • Wheat flour – 2 tablespoons

Preparation

Finely chop 50 g of almonds and combine them in a bowl with sifted flour. Add a pinch of salt, baking powder, brown sugar, and grated zest of 1 lemon, 2 large eggs, and 50 g of whole almonds. Knead the dough until it forms a uniform mass.

Shape the dough into a log with a diameter of 3-4 cm and place it on a baking sheet lined with parchment paper. Then, place it in an oven preheated to 180°C for 30 minutes.

After this time, carefully transfer the dough to a cutting board. Using a very sharp knife, cut slices about 1.5 cm thick. Arrange them on a baking sheet and return to an oven preheated to 160°C. Bake for 10-12 minutes, then flip the cookies to the other side and bake for an additional 10-12 minutes.

You can enjoy them by dipping in coffee or sweet wine.
