Craving cream-filled pastry tubes? Don’t rush to the bakery – make them yourself! It’s very simple!
Ingredients
For the Cream:
- Sugar – 90 g
- Eggs – 3
- Butter – 100 g
- Potato starch – 10 g
- Milk – 200 ml
- Vanilla – 3 g
- Wheat flour – 20 g
For the Pastry:
- Butter – 15 g
- Puff pastry – 1 sheet
- Dark chocolate – 50 g
Instructions
- Gently roll out the puff pastry and cut it into even strips about 3 cm wide. Wrap each strip individually around a metal tube, previously greased with butter. Bake in an oven preheated to 210°C for 12-15 minutes until golden brown. Carefully remove the hot tubes from the metal molds and allow them to cool.
- Bring the milk to a boil with the vanilla pod. In a separate bowl, whisk together the egg yolks and sugar. Gradually add the wheat and potato starch, mixing well. Slowly pour in the boiled milk, stirring constantly. Transfer the mixture to a saucepan and cook, stirring, until it thickens. Remove from the heat and allow to cool. Cream the butter, then gradually add the cooled custard. Mix well.
- Fill the cooled pastry tubes with the cream filling. Melt the chocolate in the microwave, then pour it into a paper cone. Use the cone to drizzle the melted chocolate over the pastry tubes as decoration.
