This recipe is simple and fun to make, and the end result is a delicious treat that’s perfect for any occasion. Buckeyes are sweet peanut butter balls dipped in rich semisweet chocolate. They’re named for their resemblance to the nut of the buckeye tree.
Ingredients:
- 1 1/2 cups of peanut butter
- 1 cup of butter, softened
- 1/2 teaspoon of vanilla extract
- 6 cups of confectioners’ sugar
- 4 cups of semisweet chocolate chips
- 1/4 cup of shortening
Method:
Combine the peanut butter, butter, vanilla extract, and confectioners’ sugar in a large bowl. Stir until the mixture is smooth and well combined.
Roll the peanut butter mixture into 1-inch balls and place them on a baking sheet lined with wax paper. Refrigerate these balls for about 1 hour, or until they are firm.
Melt the chocolate chips and shortening in a double boiler over low heat, stirring constantly until the chocolate is smooth.
Dip the chilled peanut butter balls in chocolate using a toothpick or fork, leaving a small portion of peanut butter showing at the top to make them look like Buckeyes.
