Ingredients:
- 3/4 cup graham cracker crumbs
- 1/2 cup butter, melted
- 2 cups powdered sugar
- 1/2 cup chunky peanut butter
- 1 cup semi- sweet chocolate chips
Method:
Line an 8-inch square pan with parchment paper, leaving some over the sides for easy removal.
In a medium bowl, combine the graham cracker crumbs and melted butter until well mixed.
Press the crumb mixture into the bottom of the prepared pan to form a firm base.
In another bowl, mix together the icing sugar and the crumbled peanut butter until smooth.
Spread the peanut butter mixture over the crumb base in the pan.
Melt the chocolate chips in a microwave-safe bowl at 30 second intervals, stirring occasionally, until smooth.
Pour the melted chocolate over the peanut butter layer and spread evenly with a spatula.
Refrigerate for at least 2 hours or until set.
Use the excess parchment paper to lift the cake out of the pan and cut into squares.
