Mini cheesecakes on Oreo cookies – when you have a small amount of ground cottage cheese left in the fridge, you can prepare a delicious dessert.
Ingredients
- Oreo cookies: 1 package
- 82% butter: 1 tablespoon
- Ground cottage cheese: 200 grams
- 36% cream: 100 grams
- Greek yogurt: 100 grams
- Powdered sugar: 2 tablespoons
- Grated chocolate: 2 tablespoons
- Prymat pork gelatin: 1 teaspoon
- Water: 2 tablespoons
Preparation
Crush the chocolate-filled cookies, add a tablespoon of butter, and mix. Press the cookie mixture into the bottoms of 4 small baking molds, compacting it with a flat-bottomed object, and place in the refrigerator.
Soak the gelatin in cold water. When it swells, add a bit of boiling water, mix, and after it cools slightly, mix it with 2 tablespoons of Greek yogurt.
In a mixer bowl, combine the ground cottage cheese, powdered sugar, cream, and the remaining yogurt, and mix briefly. Then add the gelatin mixture, stir, and divide the cheese mixture into two parts.
Spread the plain cheese mixture in a layer over the cookie crusts. Add the grated chocolate to the remaining cheese mixture, stir, and when the white layer starts to set, spread the chocolate mixture over it. Place the cheesecakes in the refrigerator until fully set. Before serving, you can decorate them as desired. I sprinkled my cheesecakes with caramel.
