Homemade ice cream that undoubtedly evokes the feeling of spring. Bring a touch of it into your kitchen with this excellent recipe for lavender ice cream.
Ingredients
- Unsweetened condensed milk – 1 cup
- Heavy cream (30%) – 1 cup
- Lavender – 2 tablespoons
- Egg yolks – 2 pieces
- Sugar – 2 tablespoons
Preparation
- Pour the condensed milk and half a cup of cream into a saucepan. Add lavender flowers and bring to a boil.
- Set aside to cool for a few hours, preferably overnight. The aroma from the flowers will become more intense. Bring to a boil again and strain.
- In the meantime, beat the egg yolks with sugar and slowly pour in the hot milk mixture.
- Pour back into the saucepan and heat over low heat. The mixture will thicken slightly. It must be very hot, but do not allow it to boil. Set aside to cool completely.
- Whip the remaining cream (1/2 cup) until stiff peaks form, then gently fold it into the cooled mixture.
- Pour into an ice cream maker and follow the manufacturer’s instructions. Enjoy your treat!
