Ingredients
- Banana – 1 piece
- Cinnamon – 0.5 teaspoon
- Dried dates – 5 pieces
- Carrot – 1 piece
- Walnuts – 60 g
- Oat flakes – 110 g
- Flaxseed, whole – 2 tablespoons
Cream
- Lemon zest – 2 tablespoons
- Lemon juice – 25 ml
- Maple syrup – 1 tablespoon
- Coconut milk – 400 g
- Coconut cream – 120 g
Preparation
Step 1: Prepare the Cookie Grate the carrot finely using a grater and combine it in a food processor with the remaining cookie ingredients. Mix until you achieve a smooth mixture.
Step 2: Shape and Bake the Cookies Form even discs from the prepared mixture on a baking tray lined with parchment paper. Bake the cookies for about 25 minutes at 180°C. Once they turn golden, remove them from the oven and let them cool.
Step 3: Prepare the Cream and Assemble the Cookies Mix the solid part of well-chilled coconut milk in a bowl with the remaining cream ingredients. Spread a portion of the prepared cream on the surface of one cookie and cover it with another cookie, creating a sandwich.
