Banana oatmeal and banana muffins

Try this simple recipe for oatmeal and muffins.

Ingredients

  • Banana – 0.5 piece
  • White buckwheat groats – 30 g
  • Raspberries – 70 g
  • Oat milk – 125 ml
  • Chia seeds – 1 teaspoon
  • Lemon juice – 1 tablespoon
  • Raspberries – 60 g
  • Water – 250 ml

Express muffins

  • Egg – 1 piece
  • Xylitol – 100 g
  • Whole wheat flour – 195 g
  • Olive oil – 125 ml
  • Walnuts – 30 g
  • Baking powder – 1 teaspoon
  • Baking soda – 1 teaspoon
  • Lemon juice – 1 tablespoon
  • Salt – 1 pinch

Preparation

Drain the groats and rinse them in a sieve. Drain off excess water and transfer to a blender bowl. Add milk, banana, raspberries, and chia seeds. Blend everything together. Decorate the oatmeal with any fruits of your choice. Sift flour, baking powder, salt, and cinnamon into a large bowl. In another bowl, mash the bananas, egg, olive oil, lemon juice, and sugar until smooth. Combine the contents of both bowls.

Line a muffin tin with paper liners. Transfer the batter to the tin, filling the liners to about ¾ full. Decorate each muffin with a walnut. Bake in a preheated oven at 180°C for 15-20 minutes. Check with a toothpick before removing the muffins to ensure they are baked through.
