Easy peanut butter balls

These cookies are very easy to make. You can also keep them in the fridge for later. However, they are likely to disappear from plates very quickly when you serve them to guests.

Ingredients:

  • 1 cup light corn syrup
  • 1/2 cup sugar
  • 1 cup peanut butter
  • optional: chocolate shavings or melted chocolate for dipping

Method:

Combine the light corn syrup and sugar in a medium saucepan over medium heat. Stir until the sugar is dissolved and the mixture is smooth.

Remove the saucepan from the heat and stir in the peanut butter until well combined. Allow the mixture to cool slightly.

When cool enough to handle, roll the mixture into small balls about 1 inch in diameter and place on a greaseproof-lined baking sheet.

If desired, melt some chocolate chips or chocolate in a microwave-safe bowl every 30 seconds, stirring occasionally, until smooth.

Dip each peanut butter ball into the melted chocolate, using a fork or spoon to coat completely. Return the coated balls to the greaseproof paper-lined baking tray.

Allow the chocolate to set at room temperature or place the baking sheet in the fridge for quicker setting.

Once the chocolate has set, the Easy Peanut Butter Balls are ready to enjoy! Store any leftovers in an airtight container at room temperature or in the fridge.
